Sugar 'N' Spice Cake

Sugar 'N' Spice Cake

From The Junior Women's Association of St. Andrews United Church Chalk River, Ontario Canada (1960?)

Cook 350 for 35-40 minutes

1/4 cup Sugar
3 tbsp water
2 tsp cinnamon
Combine and cook over high heat, stirring constantly, until mixture comes to a boil.  Remove from heat and let stand.

2/3 cup milk
1 tsp vanilla

Combine the milk and vanilla.

1/3 cup butter
1 3/4 cup flour
1/2 tsp salt
1 cup sugar
2 tsp baking powder
2 egg whites

Cream butter and gradually add the sugar; add 2 tbsp of milk-vanilla mixture; and beat well. 

Sift together flour, baking powder and salt and add alternatively with the milk-vanilla mixture.  Begin and end with  a dry ingredient.  Blend thoroughly after each addition at low speed.

Fold into batter, 2 stiff egg whites, but not dry.  Pour the cooked syrup over the batter and cut through with knife for marble effect.


Indian Summer Pie

From The Junior Women's Association of St. Andrews United Church Chalk River, Ontario Canada (1960?)

Bake 400 for 30 to 35 minutes (then add meringue and bake until lightly brown)

1 plain pie pastry uncooked

 
Filling:
1/2 cup sugar
2 tbsp flour
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup apple butter
3 slightly beaten egg yolks
1 cup raisins
3/4 cup evaporated Milk
1/2 cup water
Meringue:

3 stiffly beaten egg whites with 1 tsp sugar

Combine sugar, flour, cinnamon and nutmeg.  Blend in apple butter, egg yolks and raisins.
Combine evaporated milk and water in saucepan and heat just to simmer; add apple butter mixture.  Pour into a pastry-lined pan. Bake.

Spread hot baked pie with meringue, bake until lightly brown.
