Baked Rhubarb
Strawberry Jam

Cook at 375 for 8-10 minutes
From The Junior Women's Association of St. Andrews United Church Chalk
River, Ontario Canada (1960?)
1/2 cup butter
1 cup raisins
1 cup chopped dates
1/2 cup chopped nuts
1/2 tsp salt
1/2 tsp nutmeg
1 1/2 cup brown sugar |
1/2 cup shortening
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp cloves
3 eggs (beaten |
Cream butter, shortening and sugar. Add beaten eggs. Sift together dry
ingredients, add along with the fruit and nuts. Chill dough 1/2 hour.
Drop from a teaspoon. 1" apart on a greased cookie sheet.
Baked Rhubarb

Bake at 350 for 30 minutes
4 cups 1" chopped rhubarb
3/4 cups brown sugar
2 tbsp water |
1/8 tsp salt
1/4 tsp cinnamon
2 tbsp butter |
Mix together rhubarb and add salt and let stand. Add sugar, cinnamon
and water. Stir well and pour in an oiled 2 quart casserole dish.
Dot with butter. Bake uncovered. Chill; serve with custard sauce.
Strawberry Jam

4 cups strawberries
1/2 cup lemon juice |
6 cups white sugar |
Mix strawberries and sugar and let stand overnight. In morning boil for 5
minutes. Add lemon juice and boil for 3 more minutes. Put in sterile
jars. Never double this recipe.
