Cookies

Chocolate Chip Cookies 

What you need:

2 Sticks of margarine
¾ cups of sugar
¾ cups of light packed brown sugar
2 eggs
2 ¼ cups of un-sifted flour
1 tsp. Baking soda
½ tsp. Salt
2 cups of chocolate chips (better with only about 1 ½ cups)
2 tsp. Vanilla (I skip this)

What to do:

Preheat oven to 360*F. Beat margarine and sugars (and vanilla) until light and fluffy.  Add eggs and continue to beat. In separate bowl (or on top with out mixing until all ingredients are on top) measure out flour, baking soda, and salt. Mix all together than add chocolate chips.  Drop by teaspoon (or as desired) on to greased cookie pan.  Bake for 8-10 minutes. (until cooked)

Crispers

Part 1
1/2 c butter
1 egg
1/2 c brown sugar
 

Part 2
3/4 c flour
1 tsp baking soda
pinch salt

Part 3
1/2 c coconut
3/4 c rolled oats

Mix part 1 until smooth. Mix part 2.  Mix together then add last two ingredients little at a time.
Drop spoonfuls onto greased cookie sheet. 
Bake at 350 F

Deer Nuts

½ cup white sugar
1 cup corn syrup
1 tsp vanilla
Mix in pan and bring to boil. Add one cup peanut butter and melt into mixture. Pour over 2 cups Rice Crispies and 4 cups Corn Flakes. Let cool and roll into balls. Freezes well.
Great for in your pocket to chew on while your freezing your… during hunting season.

Ginger Sparkles

3/4 cup Butter
1 cup Brown Sugar
1/4 cup Molasses
1 Egg
2 cups Flour
2 tsp. Baking Soda
1/2 tsp. Salt
1 tsp. Ginger
1 tsp. Cinnamon
1/2 tsp. Cloves

Cream butter, sugar, molasses and egg. Add baking soda, spices and flour. Mix well.

Roll dough into small balls, place on cookie sheet and flatten with a flat bottomed glass dipped in white sugar.

Bake at 350°F for 8-10 minutes.

Cool cookies slightly before removing from cookie sheet.

Quick Ice Cream Cookies

Chocolate Chip Cookies
Vanilla Ice Cream (softened)

IPut a layer of Ice Cream between two cookies to form cookie sandwich
Place in Sealed Container and store in Freezer until ready to eat.

Shortbread Cookies

1/2 cup Corn starch
1/2 cup icing sugar
1 cup flour
1 cup butter or margarine
Blend butter into dry ingredients until soft dough is formed.  Shape into balls, and flatten with fork.
Cook at 300 F for 25 minutes.

A Dillar a Dollar Cookies

In mixing bowl, put 1/2 c butter
Add 3/4 c sugar, beat together
Add 1 whole egg, Beat and Beat
Sift in 2 c flour
Add 1/4 tsp salt
Add 1 tsp vanilla
Mix! T'will be smooth soon
Roll into balls the size of a dollar coin.
Press down on ungreased cookie sheet.
Bake at 375 F for 10 minutes
Makes two dozen cookies you can't beat.

Dad's Cookies

1 c butter
2 eggs
2 c rolled oats
2 c flour
1 1/2 c sugar
2 tsp molasses
1/2 c coconut
1/2 c salt
1/2 tsp allspice
1/2 tsp ginger
1/2 tsp cinnamon
3 tsp baking soda

Cream butter and sugar.  Add eggs and molasses, beat until smooth.  Combine flour, salt, spices, and soda with rolled oats and coconut.  Fold flour mixture into creamed mixture and blend well.  Drop by spoonfuls onto greased baking sheet.  Bake at 350 F for 10 minutes or less.

Brown Sugar Cookies

2 c brown sugar
3 eggs
1 c margarine or butter
Mix the first three together.

3 c flour
2 tsp cream of tartar
1 tsp baking soda
1 pinch salt
Mix with the rest, spoon onto cookie sheet, cook for 15 minutes in oven at 350 F.

Jam Jams Cookies

1 c butter
1 egg
1/2 c brown sugar
1/2 c molasses
2 tsp baking soda dissolved in 3 tbsp boiling water

Mix with enough flour to make dough soft to roll.  Roll thin and cut with cookie cutter. Bake at 350 F.

When cooked and still hot spread with jam and stick together.

Christmas Shortbread Cookies

1 c butter
1/2 c white sugar
Cream butter and gradually add sugar.

2 1/4 c sifted flour

Blend in flour gradually.  Knead dough, slowly on floured surface.  Roll out 1/4" thick.  Cut into shapes.  Sprinkle with icing sugar or decorate to suit.  Bake at 300 F for 20 to 25 minutes.

The REAL Neiman Marcus Cookie Recipe

 

1/2 cup unsalted butter, softened
1 cup brown sugar
3 Tbsp granulated sugar
1 egg
2 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1-3/4 cup flour
1-1/2 tsp instant espresso powder, slightly crushed
8 ounces semi-sweet chocolate chips

Cream the butter with the sugars until fluffy. Beat in the egg & vanilla extract. Combine the dry ingredients & beat into the butter mixture. Stir in the chocolate chips. Drop by large spoonfuls on a greased cookie sheet. Bake at 375 8-10 minutes, or 10-12 minutes for a crispier cookie.

Gramma's Jumbo Chocolate Chip Cookies

1 c butter softened
3/4 c packed brown sugar
3/4 c white sugar
2 eggs
2 tsp vanilla
2 c flour
1 tsp soda
1 tsp salt
2 c semi-sweet chocolate chips (or 1 pkg. 300 grams)
1 c chopped pecans (optional)

Mix butter, sugar, beat in eggs and vanilla.  Combine dry ingredients and blend into creamed mixture. Stir in chocolate chips.  Drop by tablespoon onto lightly greased pan.  1 inch apart. Bake at 350 for about 12 minutes.

Poppa's Animal Cookies

 

1 cup shortening

3/4 cup molasses

1 cup brown sugar

1tsp ginger

1 tsp baking soda

2 1/2 cups flour

 

Mix, roll and cut in the shapes of animals such as elephants and giraffes. Bake at 350 for 10 minutes. Cool and fill with jam and eat them.
