Sour Dough

Sourdough Starter 

1 pkg active dry yeast
2 cups warm water
2 cups flour
In a stone or glass jar or crock, dissolve the yeast in warm water.  Stir in flour.  Place mixture in warm place for 3-4 days, until bubbly and smells sour, then refrigerate.

Sourdough Feeder 

Use starter for Recipes and then feed remaining (at least 1 cup) mix in:
1/4 cup white sugar
1 c flour
1 c milk
To keep sourdough living, when not being use and when you don't want to increase the volume, feed 1 tbsp white sugar at least once a month and keep refrigerated.  Or Freeze starter.

Sourdough Biscuits

1 c flour
2 tsp baking powder
1/2 tsp baking soda
1/3 c vegetable oil
1/4 tsp salt
1 c sourdough
1 egg
Mix together, rollout on lightly floured surface.  Cut into biscuit circles.  Place in greased pan at 350 F until lightly browned.

Sourdough Pancakes

2 c flour
1 1/2 tsp baking powder
1 tbsp sugar
1/2 tsp salt
1 1/2 tbsp vegetable oil
1 1/2 c milk
1 c sourdough
1 egg
Mix dry ingredients. Combine liquid ingredients, add to dry mixture and pour batter onto pre-heated and oiled grill.

Sourdough Coffee Cake 

1 c flour
3/4 tsp baking soda
1/2 c white sugar
1/2 tsp salt
1/4 vegetable oil
1 c sourdough
1 egg
Mix ingredients and pour into greased 8"x8" pan.
Topping
1/2 tsp cinnamon
1/4 c butter
1/2 c brown sugar
1 tbsp flour
Mix topping and sprinkle on top of cake batter.
Cook at 350 F.

Sourdough Fritters

1 c flour
1 tsp baking powder
1 tbsp white sugar
1/2 tsp salt
2 egg yolks
1 tbsp vegetable oil
2 tbsp milk
1 c sourdough
1 1/2 c fresh fruit (bite size)
2 egg whites stiff
Preheat oil to 375 F.   Mix flour, baking powder, salt and sugar.  Combine egg yolks, sourdough, milk and oil.  Mix into dry ingredients.  Add fruit and fold in egg whites.
Drop 1 tbsp of fritter batter into oil at a time.
Cook in oil turning once until lightly browned.
