Squares

Jean's Chocolate Brownies

Bake at 350 F

1 c margarine
2 c white sugar
8 tbsp cocoa powder
Melt in double boiler then cool

In same pot, add in:
4 eggs
1 c white flour
1 tsp salt
2 tsp vanilla
beat until smooth.

Pour into a 11x13" greased pan and bake till done. Check by using a toothpick, insert in brownies and remove. When toothpick comes out clean brownies are done.  Do not overcook.  Cool and cut into squares.  Make icing using almond flavouring and put round dots of icing on every brownie.  Cut red and green cherries in small pieces and put on top of icing.

Sweet Marie Bars

1 c brown sugar
1 c corn syrup
1 c peanut butter
Melt ingredients in double boiler, but do not boil. Remove from heat.

Add 5 1/2 c rice krispie cereal and 1 c peanuts. Blend together and press into pan.  Cool

 

Topping
Melt 2 large dairy milk chocolate bars with 2 tbsp butter. Once creamy and of good spreading consistency spread onto cooled square.  Doesn't have to be refrigerated; Freezes well.

Dream Squares

1 c flour
1/2 c butter
1/4 c brown sugar
Mix and put in a greased pan 8x8".  Bake at 350 F oven for 15 minutes.

Mix:
2 beaten eggs
1 1/2 c brown sugar
1 tsp baking powder
2 tbsp flour
1/2 c coconut
1/2 c cherries (cut up)
1 c walnuts (chopped)
Pour over first mixture and bake for 10-15 minutes.
Ice with icing sugar mixed with cherry juice.

Butter tarts

This recipe I have, my notes say came from Nanny.

1-cup brown sugar
½ cup boiling water
1 egg
1 tsp vanilla
Butter
Nuts/raisins

Combine sugar/water/egg and vanilla.  Cook until thick. Remove from heat and add butter and any nuts/raisins. Pour into precooked/cooled tart shells.

Pineapple Squares

1 c butter
1 1/2 c oatmeal
1 1/2 c flour
1 tsp baking powder
Mix till flakey and press in pan.  Bake at 325 F until brown.  (Leave small amount for topping)

Heat on stove:
1 can crushed pineapple (14 oz)
2 tsp white sugar
thicken with 2 tbsp corn starch.  Add piece butter.

Pour over baked bottom.

Beat:
2 egg whites
1/2 c white sugar
1 c coconut
1 tsp baking powder

Spread over filling and sprinkle with remaining crumbs. Bake at 325 F until golden brown.

"Gran" Allen's Caramel Squares

Bottom:

1/2 c white sugar
1/2 c butter
1 1/2 c flour
1 egg
1/2 tsp salt
1 tsp baking powder

Crumb flour, butter and sugar together. Beat in egg, salt and baking powder. Stir in the bottom of pan.

Top:

1 1/2 c brown sugar
1 egg
1 c chopped walnuts

Beat together brown sugar, and egg.  Stir in walnuts and spread over bottom.  Bake in slow oven.

Brownies

1/2 c butter
1 c white sugar
2 eggs
2 sq. chocolate melted
1 c sifted flour
1/2 c walnuts or pecans
1/8 tsp salt
1/2 tsp vanilla

Cream butter, add sugar and cream until light and fluffy.
Add beaten eggs.
Add chocolate, flour, nuts, salt and vanilla.
Spread like fudge in a greased cake pan 8" square.
Bake in slow oven (325 F) for 20 minutes.
Cut into squares while hot.

Butter Tarts

Batter:

2 eggs
2 c brown sugar
2 tbsp vinegar
1 tsp vanilla
1/2 c butter, melted
1 1/3 c currents, raisins, dates, nutmeats chopped
 

Pastry
6 c flour
little salt
1 egg
1 c water
1lb lard

Beat eggs until whites and yolks are well blended.
Beat in sugar and vanilla.
Stir in melted butter and fruit, nuts or whatever.
Line patty tins with pastry and fill half to 2/3 full with batter mixture.
Bake in hot oven (450 F) for 10 minutes then reduce temperature to moderate (350 F) and bake for 20-25 minutes or until filling is firm.

Scotch Teas

2 c oats
1 c brown sugar
1/2 c butter
1 tsp baking soda
pinch salt

Melt butter and sugar in saucepan.  Add oats, salt and baking soda and mix thoroughly.  Remove from heat.
Butter a 9" square pan and preheat oven to 350 F.

Press oat mixture into pan.  Cook until mixture lightly browning.  Cool 5-10 minutes and then will still warm, cut into bars.

Leave cool.

Black and White Cheesecake Bites  

1 package (12 oz.) chocolate chips
½ cup butter
2 cups graham crumbs
1 can eagle brand condensed milk
1 pkg. cream cheese
1 egg
1 tsp. Vanilla

Melt chocolate chips and butter. Stir in graham crumbs. Save ½ cup for topping. Press remaining mixture into 9x13 pan. Beat cream cheese until smooth; add condensed milk, then egg and vanilla. Pour over crust. Sprinkle with ¼ cup topping. Bake 25-30 minutes. Cut when cold.
